I found that, during playing ST:F, game is constantly making http requests to google-analytics.com. It seems that you're using this as a method of gathering user analytics. I've got few questions about it: - exactly what kind of data are you collecting - how can I disable this collection in my game

We are collecting non-player specific metrics about game performance. We use these anonymous metrics to supplement the metrics Valve provides via the Steam platform.
You can block the traffic and the game will continue to function. Since you're the first person to ask about an option to disable beyond simply blocking the traffic, I will add that to my todo list.
