My Ipad crash when trying to enter the galaxy screen. It's pretty hardcore plying without ability to see the entire galaxy.

Such as, what iPad, OS version, etc? We're not getting this report from the hundreds of players on iPads every day, so if it was widespread we'd have heard it. We'll need more details about your specific issue.

Offload STF from the iPad (offloading the app deletes the app without deleting your save games/app data)
See:
Start at the "Use your device to check its storage" section.
After you've offloaded STF app, tap on it's app icon (which will now contain a small cloud icon meaning that it's no longer on the device but stored in the cloud). This will re-download/install the app from a fresh state. Your previous save games should still be intact.
Now try STF again. If it still crashes at the Galaxy screen, you may have a corrupt save game.
You can also try starting a totally new game and try entering the Galaxy screen in the new game...if it does not crash on the new save game, chances are good that your other crashing save game is possibly corrupt in some way.
As a data point, I have no such crash running STF on iOS 14.4.1 with the most recent (as of today) STF v3.1.37

It is extremely unlikely that the saved game is corrupt in some way. If you wanted to test that theory, you could would be to make a new map and then make a new captain on that new map.
Sometimes the App Store or other installers muck up an install and it takes the next update to really get things fixed. 3.1.41 is coming for iOS so let's recheck then.

No chance it is a corrupt saved game. None.
This is just a memory issue related to the size of the Galaxy map background.
Very likely if we knew details from the user about the iPad in question, we could fix.
We will wait to hear back from "Calagan Bröckström" about what kind of device they might be using.
I suspect it is an old iPad, or a rare mid-tier one with a weird memory configuration.
I only have about 15 living iPads, and there are hundreds.

I'm having the same issue.
Every time I try to open the Galaxy map it crashes the game. If I reopen the app and I go to the Galaxy screen first thing ,it will open. Later on it will crash.
Multiple characters, as early as the start of the game.
I have iPad Air (Older, but not really old.)
IOS is 12.5.3 Model# md790LL/A
Game version 3.1.59 update: same issue with 3.1.63

You could share the map seed, perhaps there is an issue with that map seed specifically.

It's been crashing with Default Map Seed v2. I started a game with the original Default map seed and that map had no issues.
Could it be something to do with Galaxy Size? Since the original default is smaller than the orginal?
Is there a seed I could use that has an arrangement similar to V2, but sized like the default seed?
Update: So I tried using the Default V2 seed, but changed the sectors from 42 to 37. Which still caused it to crash when opening the Galaxy screen.

Does sound like a texture size limit on the iPad with the new default map's background. I've added it to our list to shrink that texture for mobile devices. In the meantime, you can keep playing on V1 maps without issue I imagine.
