Hey, when you have a parasitic worm burrowing through your flesh on is way to your heart or brain, having a medical officer with a conveniently equipped cutting tool hand could be the difference between living and having a swiss-cheesed brain. Still, old Doc would need to have a laser cauterizer for a right knee-cap to help stop the loss of blood while a new limb can be extracted from the cloning vat ...

Don't dog degenerative cutting devices until you have been severly traumatized and subsequently re-habilitated by one!
Actually, a medical officer that randomly treats wounds in space, much like a mechanic does damaged ships, would be nice. Having one on board should give a bonus to recruiting, if it is another redheaded chick. "Turn your head and cough sailor."
I would also like to toss in the suggestion of a quartermaster officer. He could reduce the rate at which your ship consumes water/rations, and help when fending off mutinies.

Oh ... but everyone knows that plants are evil toxic things that are not ingest-able by humans. I don't think anyone has eaten a plant since the mid 21st century. Not when they discovered how to vat-clone sheep and beef.
