Its not just with that ship (Pirate Marauder). It is with many (all?) ships that you capture and take. And the problem isn't that the sails sometimes are white, but that they are sometimes 'the ship you were sailing before you captured the one you are in now'. So right now I am having the same problem with the Man of War I recently captured. Should be 3 masts, white sails, but sometime I am getting a 2 mast black sail version. That's my old ship ...
