The route-editing feature of my "Itinerary" proposal would be very complicated to implement, and I doubt that it will be done any time soon. Unless and until it is implemented, there's a much simpler feature that would help considerably with the same basic problem. For any waypoint, whether selected from the rumor, contract, or map screens, the following information should be supplied: the amount of time it would take to get there from my current position, and the amount of water/fuel that would be consumed along the way. That information should be provided for both the route that takes the least amount of time, and for the route that requires the least amount of water/fuel. You should have the option of choosing which of those two routes you want to follow. I'd like to have this information while I'm still deciding whether or not to accept a contract.

U would also have to take into account sail damage aquired along the route or damage from encounters with other ships. Any prediction of fuel consumption would only be a best case scenario.
I look at any route as best case 0(zero) worst case: plan on stoppin by the nearest independant enroute for resupply.

It should be assumed that it would be best case as it's impossible to know that a random event may occur. While, in theory, it might be possible to predict the chance of and amount of damage along the route and give a range of estimates and a margin of error, but that would probably be difficult to do and I'm sure that there are tweaks wit higher priorities.
