I've listed the components of my current Explorer's ship (a Broadsword). Although I rarely get into ship battles with my Explorer captain, but when I do, I always dominate them with this ship even though I'm playing on Impossible.
Please let me know what you think, and what you would do differently.
Components:
Combat Strategy: My plan is to use Talents that gives a Defensive bonuses at ranges 5-4 while moving forward and using both Torps. At ranges 3, I obliterate them with my Gravity Drivers. My one Plasma Cannon can be used as a backup gun in case one of my other guns break, but it can also be used with the two extra RP I get if I use Engine Precision.
Please note this build has not yet fought against a Broadsword, Dragoon Cruiser, or Cautela Heavylift, so it has not yet been tested against truly challenging foes.
Edit: I just fought against a Rychart BH in a Broadsword with my Explorer's Broadsword! The fight lasted for many turns, but I was easily the victor. He only hit me once (with a torp). Perhaps it would have been more difficult if my foe wasn't spamming Failsafe Protocols for no reason. You got to fix that AI, Cory!

-x1 M8000 Void Engine
This is currently the only kind of engine a Broadsword can use.
-x1 M8000 Hyperwarp EX
Upgraded version of the normal hyperdrive
-x1 Bridge 4
Currently, this is the best bridge.
-x4 Officer Cabin
This ship could have up to six officer cabins, but I don't need that many.
-x1 Barracks 5
This holds 36 crew. The Broadsword could potentially have 42 crew, but I don't need that many
-x2 Cargo Hold III
Having two of these gives me 72 cargo space. Useful for transporting large quantities of artifacts and other goods. They also give extra fuel storage.
-x1 Fuel Tank 4
This is currently the best Fuel Tank.
-x2 Medical Bay 2
Having two of these brings my ship's Medical rating up to 14, greatly assisting certain Doctor Talents.
-x1 Resource Processor
Increases the quantity of goods the player digs up.
-x1 Hyperion Exo-Suits
Reduces damage the crew takes from "Crew Danger" cards in Exploration (and other card mini-games).
-x3 Pilot Assist Module 4
These give excellent Pilot and Ship Ops soak.
-x3 Nav Assist Module 4
These give excellent Nav and Electronics soak
-x1 Commander PC-1 (Level 4 Plasma Cannon)
This is a backup gun.
-x2 Firestorm Torpedoes (Level 3 Torpedo)
I didn't have enough Mass to fit high-level torps.
-x2 Retribution Gravcannon (Level 7 Gravity Driver)
These have a LOT of Mass, but they are very powerful.
-x1 Reinforced Structures
I only have enough Mass for the level one version of this, but I will dodge most enemy shots anyway.
-x2 Advanced Mass Dampener 4
These are necessary to make all the other components fit.
