fallen I also figured out that having their stats reset after each battle would be the easiest. This way, the challenge to keep them safe and sound would also be the same, no matter how heavily stuffed you are because you wouldn't be able to give them nano-ready medkits and stims to make them unkillable between each fights.

What would make it harder would be having the Mark not under player control. They might panic and run, increasing the headache of keeping them in a bodyguard box.

It would be rough if the Mark always panicked. I was thinking that they would stay put at first, or follow orders. Fleeing would be triggered by taking damage or even being in range and targeted but missed. Basically, so long as the CK team was winning and keeping the attackers at bay, the Mark would trust the CK and do as instructed. Screw up or put them at risk and they could lose that confidence.

I think that if you are escorting somebody, and you decide to stop on the way for a capture or assassination job, or a raid they should freak right out and panic. Stopping to deliver some mail or a package, or a neuro-crypt wouldn't worry the mark, though.
