What difference does the type of squad that you select when you start a new game make? Can my tutorial squad only do the tutorial missions?

If you beat the tutorial you'll be able to use the squad for the other campaigns. The different squads start on other campaigns with different classes in the squad.

It would have been a shame to have to relegate my co-op squad to the barracks.

Yeah your welcome dude. My best Captain is a tutorial captain that never managed to finish the Narvidian campaigns- He fed so many newbs into it after his best men died...
