I just started playing and I'm wondering if it's possible to engage a group of enemies and not have all of them notice you? I'm escaping the first dungeon and multiple times I've engaged cave spiders and ended my turn to have the one I attacked strike back but his buddy who is a square or two away (usually in a slightly shaded space) just sit there even though their is room for him to attack me.

If you're in combat and can see enemies, they can see you too.
This behavior is likely due to the AI deciding to hold some troops back, or waiting to attack you for whatever reason.

This behavior changes as the AI of different enemy groups change as well. It is especially prevalent in the first dungeon.

I wish there was a way to fight against a perfect AI (super tactical and aggressive, using entire groups of enemies instead of one or two at a time, that kind of thing) without it having the level advantages of the higher difficulties. I like how the AI fights on NM, but I can't get over the level differences.

I don't think the AI works differently on higher levels. I still encounter the described behavior on most of the in between encounters.

The AI types change throughout the game. You'll encounter different ones. The "hold back some forces" capability of the AI is present in most of the AI models. It is more prevalent early in the game.
