In exchanges I've noticed the letter grade for a give product often varies between the Demand and Sell screens of Exchanges. Why?

Maybe you can give a specific example and we can explain?
Letter Grades are relative to the type -- buying or selling.
Buying an A+ unit means that these goods can be sold cheaply by the Exchange.
Selling an A+ unit means that the Exchange is willing to pay a high price to get it.

really? I haven't found this. I have found that 'how strong is the economy' is a better guide to 'how much stuff can they give me before they run out' for any commodity. Maybe this will become clearer when the total amounts available are always printed.

In the Exchange, the Browse Demand button takes you to a screen that shows 'Resources consumed by this economy.' and each listed good is given a demand grade.
The Sell Cargo button takes you to a screen where you 'trade your own cargo in the exchange.' and a Demand % grade is shown for each product.
What is the difference between Demand and Demand %?
As an aside, the Browse Demand screen says 'buy in exchange' at the top.

That should greatly help all of these discussions!

Okay then. Here are two screenshots, supply followed by demand. There are a few problems. One, the fonts for the column heading are way too big. Two, the name of the good can obscure the rest of the table. I think you know about these. Three: both tables say 'Buy in exchange' in cyan on top. The demand one should say 'Sell in exchange'. Four: The first column of the table is called 'Supply' or 'Demand' despite only being tangentally related to the Supply or the Demand. This column needs a new name. I think what you are listing there should be called 'Profitability Rating' or 'Price Attractiveness' or 'Favourability' or even 'Good Deal?' because that is what it seems to be. A letter grade for _how good a deal this is_. If the letters mean something else, other than this or in addition to this, can you explain what else is involved?

Agree with johndramey here, I am enjoying the trade system. Maybe I am being a bit simplistic but I like how the letters indicate demand/price where the price is driven by the demand, and that the level of the economy determines how many items can get absorbed before demand changes. The legality system brings in an interesting nuance too; I thought that I was going to make a killing on my narcotics until all those lovely safe high economy/high law planets threw me out and I had to track down some dodgy lawless backwater to sell them at.

Maybe I am being a bit simplistic but I like how the letters indicate demand/price where the price is driven by the demand, and that the level of the economy determines how many items can get absorbed before demand changes. The legality system brings in an interesting nuance too; I thought that I was going to make a killing on my narcotics until all those lovely safe high economy/high law planets threw me out and I had to track down some dodgy lawless backwater to sell them at. Right? And you have to sell for pennies on the dollar because it's probably some independent planet... Bah! I can't wait for the smuggler stuff so I can smuggle properly!

I too am enjoying the life of a Star Trader Merchant, something I never envisioned doing. I always played combat focused builds in the original ST. Great job TBs!
Back to my original question. I pulled into Knights Rest for the first time. I was excited to see Edible Plants had a Demand Grade of B on the Browse Demand screen because I had some in my cargo. But when I went to Sell Cargo screen Edible Plants had a Demand Grade of C. Why were the two grades different?
Note: I used approximate grades above. I can't recall the exact grades.

Maybe you need to sack your merchant officer?
