Enemy Crew who are not Fighters have been equipping Rifles. The only exception here seems to be Crew Dogs, who still equip pistols.

Depends on slot. Same code is run for your Crew and Enemy, like the same lines exactly so if you don't mess up the equipment, you'll get the same result.

I've seen sniper rifles in Slot 0, and LMGs in Slot 1.

I'd need details, maybe screenshots, probably saved games sent mid combat? It should be exeeedingly rare (0 out of 100K), if we are talking about the same thing. If we are not talking about the same thing (Screenshosts?) then I dunno

I had eliminated all of the combat crewmen at that point.

I'll let the Crew generator run overnight. It should be able to bang out about a million of these by morning, and I can run some statistical analysis on the results.
Maybe that will point it out. Maybe a screenshot will help. I suspect this is one of those things that is just confusion or easily explained.
it seems unlikely that you're experiencing regular occurances of events that occur 0.00000000000004 in 100,000 iterations.

I am on android where we don't get those displays at all. Usually it tells you all the jobs of officers you are fighting? One of the minor annoyances -- alpha UI -- of sending people out to crew combat under android is that it lists my officers by their first job only. Sure you want to send that Hyperwarp Navigator out to fight? Hyperwarp Navagator, my left buttock! The first thing I did when I became captain of this ship was promote him to officer, on the strength of his strong combat skills, and he's been training in nothing but Soldier ever since!
