I think I uncovered a serious advantage of infinite counter-attacks. It seems like if you counter-attack a counter-attack (that is, on the Templars' turn) it doesn't consume AP if you have unlimited counter-attacks. This is very handy as it therefore doesn't consume MP along with the AP. So not only does unlimited counter-attacks mean you can hit more foes during the enemy phase, but it can give you versatility in your options during your turn as your counter-attacks won't stop your turn early.
Is this understanding correct?

That's a big part of why it is a big deal then. Now it makes sense as a choice to me. I'll have to include this in the wiki entry.
