This question came up on the Steam forums and I didn't know the answer for sure. Which weapons of the Scout are considered Sniper rifles?

Any weapon the Scout employs that doesn't include Bio-poison I would say is a true 'Sniper' rifle. Every weapon in their arsenal is a long range/high accuracy weapon and can be used much the same way.

To clarify, only weapons that state they are "Sniper Rifles" are Sniper Rifles and therefore use Stealth as their Critical Factor.
Needle Rifles use Quickness for their Critical Factor, not Stealth.
To quote the library entry for Quickness:
"Quickness increases the damage multiplier from Critical Hits from any ranged attack, except Sniper Rifles which use Stealth instead."

There is a single rifle (the starting one?) that isn't bio-poison nor a sniper rifle. Am I right?

Sorry, I believe you are wrong. Scouts can only equip Sniper Rifles or Needle Rifles.
There are other types of Rifles for Soldiers.

Ok, so "Scout Rifle" the first available STR-based gun is a sniper rifle? I wasn't sure on the first one, but it makes sense for it to be a sniper rifle.
