If I want to buy a new ship, do I get the default configuration of that ship?
This is especially of interest (to me) when I've upgraded barracks in my old ship, my new ship will have a default configuration that's below my current barracks level, but at the same time "upgradeable" on that world to fit my entire crew again. I don't want to lose any crew (or worse, officers) if I can prevent this.
Can anyone talk me through what happens in these types of scenarios?

It won't let you board with more crew than the ship can support. However, if the ship can support more crew if the barracks were upgraded, you can upgrade it in drydock before boarding it. You can even continue running missions or whatnot while you wait for that upgrade to complete planet-side.

Oh, so when you buy a ship, it's placed in drydock where you can upgrade it before actually boarding it? And if I have insufficient crew capacity, I'm forced to fire enough crewmen to fit into the new ship before I'm allowed to board?
That's good: I don't want the game to decide what members of my crew to fire if I make a mistake with amount of barracks space available.

May I chip in with (yet another) question? Is it possible to raise the number of Officers beyond the Hull Maximum? I'm somewhat confused about this, because: - the description for the Sword Battlecruiser lists the maximum number of Officers as 7,
- I currently have 5 Officers (the Ship screen claims I have 6; does the Captain count?)
- I have enough cabin space for 8 Officers,
- yet the Alert Bar tells me I have three vacancies to fill...Is it a bug, or a feature?

Looks like a missing Wiki page. Try hovering (or long press if mobile) on the labels that are confusing you. The game has all the details in it.
I will work on copying those details from the game's hovers into Wiki pages, and I will check back and post a link.
TL;DR - ships have a max, component totals have a max, sometimes they don't match. 7 is the highest released ship.

I added a screenshot to my original post to help illustrate what I believe to be the issue. I think I got the underlying mechanics right, but the game itself seems to be a bit confused about it. If the ship has a maximum number of Officers it can accommodate (regardless of the amount of Cabins I decide to cram into it), then I shouldn't be prompted to hire over the allowed maximum and that's what seems to be happening to me. I hope I'm making sense here... EDIT:
I just ran a little test and hired an additional Officer. This brought me up to 6 Officers + the Captain and the prompt disappeared from the Alert List (Hull Maximum). After sacking the poor fellow, it reappeared once more, telling me I have enough space for 3 more Officers. I believe the Alert List isn't taking the Ship Maximum into account and simply tallies up the amount of "bunks". It also seems to me that the Captain is counted among the Officers despite being "housed" on the Bridge. I hope this helps.

I think it's a confirmed bug at this point: it is possible to hire more Officers than the hull maximum allows, as long as you have any free quarters. Sorry to hear you're having some sort of bug. If you can provide any specifics about how your game got to that state, I'm sure we could investigate. Without speicifcs, I'm sorry there isn't much we can do

Without speicifcs, I'm sorry there isn't much we can do I chose to post in this thread because we already had a somewhat related back-and-forth in it before. Also - there's nothing to be sorry about. Anyway, my ship was already at capacity (5 Officers + Captain; 6 hull max) when I completed the mission requiring me to absolve Ramius of his supposed crimes. At that time I had an Officer's Quarters left over from before a refit and so Ramius was able to join my crew, even though that made him the seventh Officer aboard (which shouldn't be possible).

veyer - ok, that's why I need details Your initial report basically indicates that you can hire new officers at any time. But it seems like you can't. I've spent about 30 minutes trying to reproduce this in different ways. Seems like time spent chasing up the wrong tree. Is the bug report that you can recruit Nikolai even if your ship can't support the additional officer? I'm hesitant to spend any more time on this without real details.
