What is best combo of jobs for a combat medic officer for combat? Currently using pistoleer/C.medic/M.officer.

That's pretty strong. Mixing with blades is not uncommon to get offhand parry. Most captains like their Combat Medic in slot 3 and 4 to keep them out of the usual line of fire. Therefore, Spy is popular.

I think I've seen Darion post in the discord server about a CM/BH/MO build. Excellent buff and debuff options, but with such a low accuracy dice pool don't bother trying to do damage with it.

Therefore, Spy is popular. So I'm admittedly ignorant of a lot of mechanics. So explain offhand blade to me. I know you have to have blade skill to equip one offhand but does it only block Melee attacks or does it contribute to defense from bullets as well?

It's a suggestion if you are trying to place Combat Medic in rank 1 or 2, where they can be easily targeted by melee enemies.
CM is most popular 3/4

Okay yeah. Currently I have my medic in position 3. 1 is my swordsman and I have a snubber soldier up on 2 with a sniper in position 4. So if it's only against Melee that I get dice for with offhand then I should probably pass on it. Though I am graced that my current playthrough I managed to have device Freak on the crew I promoted for medic so I can get some extra bonus with a 2nd specialist equip.

i think all depends of your play style. i'm using right now this team assasin/bg/sw 5 lv gunner/zeal/cm 5 lv gunner/mo/cm bh/sol/commander or bh/exo/xh
they dont have big healing potential like doc+cm+zel/mo but together on important ship fights they allow me to disable a lot of enemy guns at end of second turn disadvantage of this is that you need to hire extra 2 docs instead of commanders/mo but... if your def is not enough for avoiding enemy weapon even with talents then those 2 extra co/mo wont help a lot besides boarding - and since my main strategy is boarding - i need to balance that so they could board succesfull
