After the Duel of Assassins starts, in one dialog with Val there's a message that you need "an empty crew bed" to take her on. Obviously, this isn't accurate anymore, and contradicts a message in one of the other Val dialogs.

I don't understand. That sounds correct.
Maybe you could provide the other dialog?

I don't remember the exact words, but in the other dialog, Val says she's willing to stow away if you don't have crew space, and I think the red messages tell you she can get on board whether you have a space or not.
Wasn't that mission modified some time ago so that you didn't need a vacant slot?

Will investigate, but pretty sure you always need vacant space. If she joined without vacancy , the next time you landed a crew member would be forced to desert.

In the dialog where you report back new from "Crimson Summit", the last orange text says, "She will join even if you lack bed space at the moment." I think I've actually recruited her without an empty crew spot, though it was a very early game of mine--I'm pretty sure that no one deserted, though.

Ah, yes -- it depends on how you are picking her up. From the Crimson Summit, she is fleeing the palace -- no choice, she's coming aboard. Someone else will desert. Regular pickup by talking to Calagan, requires bunk.
