Upgrades:
Hull: Cargo Hull (+6 Hold,+2 Hull) Combat Upgrade: Crew Weapons: Grappling hooks and pistols Crew Upgrade: Interior Upgrade: Cargo Lockers (+12) Cargo Sail Upgrade: Improved Mast (+5 Mast, +2 Sail) Cannon Upgrade: Chainshot Loaders
With this build I can take on any opponent and win the fight any time, I hunt Ice Demons with this thing. I trade a couple of shots with my long guns to lower their sails and masts, then charge in and board and will only lose 1-3 hull and 1 mast 3 crew. I hope this helps people. Not to mention the trading and cargo capacity.

I don't have a special name for my ship but it's a War Galleon.
Stats are as follows: Hull: 44 Mast: 23 Sail: 38 Crew: 65 Cargo: 62 Cannons: 26 Long Guns: 14 Running: Good Tacking: Poor
Upgrades are as follows: Hull: Stone Wood Keel (+4 Keel +4 Hull) Combat Upgrade: Fortified Forecastle (I was debating back and forth about whether to get the Whaleboats in place of this or not, but I don't know what they give over each other) Crew Upgrade: Cargo Lockers (+12 storage) Sail Upgrade: Improved Masts (+5 Mast +2 Sails) Cannon Upgrade: Grapeshot Loaders (It seems the effects of this upgrade and the chainshot is incorrect. When using this upgrade it damages the ship instead of the crew members. I haven't used the chainshot yet though, so I don't know if it is wrong as well.)

Before I had to restart my games due to getting a new android, I was running a heavy schooner with maxed out sails. Pirating with that ship was amazing- nothing could escape due to great running and the amazingly high sail count. Death Incarnate was her name, and she served me well. I have a question concerning storm sails, however... They cost much more than 25% sail increase and I'm wondering if there is a latent bonus to resisting the winds better... Also do luxury cabins raise passenger rates like the gourmet galley does? I assumed it did, but the description doesn't mention any bonus.

I also think there is something to be said for the Eastwinder series of ships. The Heavy Eastwinder to be particular. I have gotten a hold of this ship, through purchase or more commonly by piracy several times now and I can honestly say that for the merchant/smuggler aspect of the game these boats are amazing especially if you can get them early. 65 hold to start, decent hull/mast/sail and enough cannons to cripple any pirate to the point of being able to easily escape. Good/Good run/tack makes this easily the best ship set for combined range that I have used personally as it can hold 200 or so rations.

I got attacked by a Pirate Brig, when still a level 3 Knight. I won the duel. This has been my most successful AoP experience so far, and the Pirate Brig has been wonderful. I don't know if I will ever find something I like better -- a plain Man o War hasn't looked as good to me so far. (I will go back to my regularly scheduled job of making the seas safe for Ruesland Merchants by killing every Pirate I meet. )

I think, but am not sure, that what the Gourmet Galley does is to make every one of your 'transport people' jobs pay a little better than it otherwise would while the luxury cabin means that every so often a lord or a magician will come, wanting transport, and will give you an exceptionally well paying job. That is correct -- both of those upgrades contain a similar contract logic that offers a general bonus for Commissions, and Luxury Cabins offers an occasional mega bonus. In addition, Gourmet Galley has effects on Crew Morale and the ability to process fresh rations.

Haven't named her. I also tried a naval manowar with the same upgrades but I need the cargo space. I can avoid most encounters and my long guns usually take care of the rest. I chose the improved mast upgrade over sails because sails are always getting damaged lowering my ships stats possibly making my ship easier to catch, while masts only get damaged in combat.

about the Axes, whale boats, muskets, fortified forecastle etc upgrades
They all seem to fill the same niche, i.e. make your boarding more successful. Whaleboats cost the most. Are they also the most effective?

Here is my Marines Assault ship: Ship: modified Darksail Cutter. Running GREAT. Tacking GOOD. Hull - 29, Mast - 41, Sail - 40, Crew - 68, Cargo - 44, Cannons - 12m, Long gun - 9.
Officers: First Mate - (stock) Kezar Baltos. 2nd officer - Galda Fenn-Tenath. 3rd officer - Nathaniel Sveet.
Upgrades: Hull Upgrade: Hollow Mast (+6 mast, +2 keel). Combat Upgrade: Muskets. Crew Upgrade: Additional Quarters (+20). [ there is a better one but I don't have veteran soldier unlock.] Sail Upgrade: Improved Masts (+5 mast, +2 sail)
I have defeated these nasties by boarding / dueling at least once:
- Champion of Inequity (Ice Demon)
- Pride of Horror (Ice Demon)
- Sacauathu the Bloody (Kraken?)
- Chariot of Rhaggash (Ice Demon)
- Rostrak the Maw (Ice Demon) - 2 times within days

Haven't been at AoP long enough to be sure of a fave hull... but my Merchant Schooner is the best I've run across so far and continues to serve well...
+4 keel, +4 hull +5 mast, +2 sail +4 long guns (forecastle) no others yet, no officers located

In further developments:
This thread prompted me to go ahead with Whaleboats for my Merchant Schooner... so now I just have the crew upgrade to decide. Any suggestions? (free version; no unlock)
Additionally, my latest renaming had Dead Reckoning neck n neck with Extreme Prejudice; the latter won fer now but the former will no doubt find use under another captain...
As a final thought: how about fave captains? A couple of mine:
