Does anyone know what the armor types do? So far I've seen stealth armor, light armor, and mage's armor. Only stealth armor appears different with bonus to stealth and dodge..

Clearly mage armor will start stacking its own set of bonuses, when you can find some good stuff.
The other as-of-yet unseen type of Heavy. which only a few characters will be able to use, changes the character's visual on the map, and stacks up the protection points in a big way.

Will the outlander be able to use heavy armour or is he going to be stuck to light? This makes me so curious about the other classes!

The Outlander can use heavy armor. Light Armor can be used by most light combatants, but will top out on protection values much lower than heavy. Magical mage armor is at a premium and not something you'll find easily.
