What is the best ship economy that you have gotten? Its a big deal for my explorer to stay out for a long time with a massive hull and bounce planets.

Low hull, crew, speed and agility and lots of sails. The problem is that high crew is needed for exploration and speed/agility both provide combat bonuses. I'd choose either speed or agility, have medium or high in one and low in the other. Speed is better for long range combat and avoiding encounters in deep-space, Agility is better for short range combat, avoiding encounters when landing and harvesting. I'd also lower the hull as much as possible.

+1 on big sails, defo helps a lot.
i'm prety n00b at this myself but one thing i've done in order to max my fuel economy on long explorer hauls is to take control of at least some of my flight path. seems to me that by re-routing so you avoid red as much as possible you can squeeze a lot more out of a tank of gas, even if it takes you the long way 'round to get where you're going. of course this assumes you've managed to get a low green burn rate.
other thing i've noticed it that it seems to work out best if you shop around to buy a ship with good fuel economy. Ship Design never seems to yield ratios that are as good, though that might be operator error on my part.
best i've had was 0 green, 0.1 red but that was playing at Normal. in Difficult (or Daunting or whatever it's called) i've seen 0.15 green with something like 0.3 red which isn't too bad though it seems you have to sacrifice a lot -- hull/crew/armor/armaments/etc -- to get it.
in the end i'd bet it comes down to different ships for different purposes: a ship that will run forever on vapor will probably not be a much good for big freight hauls, and vice versa.

It also depends on Pilot and Intimidation skills. Once these skills are both at about 15 you start to get 0 fuel consumption for small ships which are medium or slow. As your skills go up (especially Pilot) you can worry less about fuel consumption.
On the other hand, if skill difference is taken out, a small Hull ship with sails 30+ and a small crew is your best bet.

In addition to the ship, skills will decrease wc. Pilot helps much more in green/faction sectors and Intimidate in red/indy sectors. Damaged sails and engines will increase wc. The harvesting plant will decrease wc, but only while you have a fully-repaired ship. This is the best combo: High Pilot (green sectors), Intimidate (red sectors), sails Low hull, crew, speed, agility, difficulty Ship fully-repaired, Pilot, Mechanic (keeps ship fully-repaired), Harvesting Plant (works best in red sectors with Mechanic) Also, in addition to decreasing fuel-consumption, esp in red sectors, Intimidate also decreases morale loss once your wf = 0. A high Intimidate will allow lots of travel with no water nor rations and no mutiny.

I have found the Javat Cutter to a great ship when it comes to fuel economy. I currently have it at around 85 cargo and 52 crew. Not a freight hauler by any means but it gets most jobs done. At peak efficiency, it runs 0 in faction space and less than .5 in deep space. If you can get one and get the right upgrades then it serves well and you can avoid much fighting.
