For commissions at a Port we can easily use the Commission Map and the port name give. What about "Deep Sea" locations? There is no way I can tell where in the map sector it will be unless I accept it. By then I may have to loose reputation to get rid of it or pay the high ration price to sail upwind to get there.
In AoP we have to deal with wind direction. The last thing any of us need is to sail against the wind to get that corner of the map. Rations are scare in some ports in the more remote sectors. In ST there is no wind to deal with, red zones are rarely the issue if you have the proper officer on board. Far corners of the galaxy can be reached by making stopovers along the way.

Stop sailing against the wind. If you need to go NW, go a whole lot North then a whole lot West.
I bury lots of food in the deep sea islands so I can take on these missions, because they pay well.

I started doing that as well but unfortunately you still have to get there. If the commission is to a port, I can know that in the preview and make my decision. But a Deep Sea commission I have no way to know until I accept it, and I probably given it when I am in another map sector.

If the people at the Castle showed you on the charts where they wanted you to sail it seems like they would fail as operative of the Faction, no?
Would strike me as a bit silly, but I understand why Deep Sea commissions are a challenge. That is part of the game I think, and one that sets it apart from ST.
The difficulty scales in AoP have been *massively* adjusted to more than (IMO) compensate for the Wind mini-game.
Don't sail against the wind. At a minimum, zig zag!
