Can anyone tell me what the difference is between a Normal Exit after combat & a Stealth Exit after combat ?
I know you can take stuff after combat but then all you get is a Normal Exit. If you don't take anything then you can choose between Normal & Stealth Exits

I believe it has something to do with the amount of heat that you'll create.

nemo and moody - correct. Stealth exit involves a skill roll and may allow you to escape the area without drawing additional attention. Staying behind to sift through pockets almost always generates additional unwanted (?) attention and ire from the faction whose dead you have summarily executed and were seen clearly looting!

Now I'm in two minds over intimidate, on the one hand it could mean intimidate who ever remains. Which would be a little difficult as they are usually corpses. And corpses don't tend to get intimidated.
Or it could mean to intimidate any potential witnesses.

I thought that as well, but I haven't noticed any difference in heat after combat. Perhaps it doesn't do anything yet?

Put points into Dexterity and firearms. I've have 2 char (gunslinger and hacker) and no problems to hit the target. (after some level up)
If your heat is high, you'll encounter more and tougher bad guys.

Yep, finally made a successful character after the stat system was explained in another thread. Now my gunslinger can actually hit stuff.
